Can You Believe it’s Already MAY!?

Happy Spring EVERYONE!

So seriously.. can you believe that it’s already May? Like WHERE did the last 4 months go?! Speaking of May, with it being Cinco de Mayo and all, I wanted to share this list of AWESOME healthy taco recipes with you!

Sooooo…. before I get to the monthly specials, I wanted to share my progress with our NEWEST program by Tony Horton, 22 Minute Hard Corps. Guys, this program is AMAZING… AND as the title says, it’s just 22 minutes a day, 6 days a week!

I did a post recently about my 4 week progress you can check out! Can’t believe it’ll be wrapping up in 2 weeks!

That program is GREAT for everyone! There are modifiers for every move, and well, at just 22 minutes, even the busiest person can’t say they don’t have time!

22 Minute Hard Corps: 4 Week Progress

Here they are!

My 4 Week 22 Minute Hard Corps results!


Down 6 pounds. Feeling SO MUCH stronger! Moves I could barely do week one, I’m NAILING now at the SAME PACE as the video!

I feel so badass with this workout. It’s all moves I pretty much love to hate, lol, but combined, I’m feeling better about myself than I have in awhile!

Goals for the next 4 weeks:
– don’t miss ANY workouts! I missed 3 in the last 4 weeks and that’s dumb considering it’s only 22 minutes
– nutrition. This is the BIG one for me. I wanna be 90/10 but if I’m being honest, I was probably only 70/30. Lots of room for improvement here.13000174_542674069244865_2571823777584891657_n

Overall, I’m happy with my consistency and I LOVE this program! If anyone wants to hop on board, message me and I’ll get you the details. This program made me fall in love with my journey all over again!!

It’s been a long time!

So….. it’s been like 2 years! And you deserve an explanation!

I can’t even begin to tell you how many times I said, “Get back to the blog!” “Write a blog post!” “Just do it!” “Stop putting it off!”

But that is exactly what I kept doing. I kept putting it off…. and off… and off….

Why? Because i wasn’t exactly sure how to transition from what I started as a food blog, into what will now be more like an overall wellness/lifestyle blog… but still with lots of food sprinkled in because it’s still my passion!

What’s it all going to look like? I’m not even really sure just yet! But I welcome you to come on this journey with me and find out as I figure it out.plank

Clean Slow Cooker Thai Peanut Chicken

This recipe combines 3, well 4 of my FAV ingredients/foods. And before you harp on me for calling salsa an ingredient, get over it. LOL
For the simplicity of this recipe it is ONE ingredient because it is something that you will have already made ahead of time or purchased. So there, one ingredient.

So now you know one of my three fav ingredients. The other two, peanut butter and garlic! Mmmmmmm. And that wavering fourth favorite, Sriracha. Oh yes, there WILL be sriracha!

Thai Peanut Chicken


So, the REAL reason for this post is give all you a simple but easy, set it and forget meal. I feel like so many slow cooker meals can be so blah after they have cooked all day. Everything tastes like everything else it was cooked with. BUT not this! It’s delicious, and healthy, and if done right, CLEAN!

Now, normally, I like to have more pictures on my posts. However, let me honest… nothing looks pretty cooking in a slow cooker! Ha! I genuinely hope that you have fun with this recipe. Its versatile and so simple, and can be created with things people most likely have on hand.

Slow Cooker Thai Peanut Chicken

2-3 chicken breasts
1/4 cup peanut butter (natural or make your own like I do)
1/2 salsa (make you fav recipe or use a clean one like Muir Glen)
1 tbsp freshly minced or grated ginger
2-3 tbsp soy sauce, tamari, or coconut amino (I use coconut aminos)
juice of 1 lime
2-3 cloves minces garlic
Optional: You can add sriracha to taste in the mixture before cooking or top it with it. Since I’m usually cooking for little mouths, I opt to add it after cooking.

1. Mix all ingredients, except chicken, in a mixing bowl

2. Place half of mixture on bottom of slow cooker. Place chicken on top, then top with the remaining mixture.

3. Cook on low 4-5 hours or high 2-3. Check chicken for doneness as all slow cookers vary. You can shred chicken and mix in sauce or serve as whole breasts. I served mine over zucchini noodles with steam veggies. Top with cilantro, crushed peanuts and MORE sriracha.
